Walleyes are sold LIVE or WHOLE on Ice, fresh filleted (skin on or off) as well as CRYOGENICALLY frozen fillets (skin on or off) frozen to -160 to -180 degrees within minutes of filleting. This method of freezing provides the maximum flavor retention and quality of our fish.
